Beef Enchiladas

Steps

  1. Brown beef, add onions and salt when half browned, cook well, drain oil.
  2. Make red chile (3 tbsp oil, flour) by browning flour and adding red chile poweder (2 tbsp) and 1/2 tsp salt, and enough water to gravy-like sauce.
  3. Warm tortillas to pliability.
  4. Put approx. 2 tbsp of meat/onion mixture and one strip cheese in every rolled tortilla.
  5. Line up enchiladas an 13x9 sheet pan.
  6. Preheat oven to 350
  7. Pour chile over enchiladas.
  8. Bake covered at 350 for 45 minutes.
