Beef Enchiladas

- 1 1/2 lb ground beef (optional)
- 1/2 onion, diced
- 16 corn tortillas
- 1 tbsp salt
- 3/4 lb cheddar cheese, stripped
- 2 cups cooking oil
Steps
- Brown beef, add onions and salt when half browned, cook well, drain oil.
- Make red chile (3 tbsp oil, flour) by browning flour and adding red chile poweder (2 tbsp) and 1/2 tsp salt, and enough water to gravy-like sauce.
- Warm tortillas to pliability.
- Put approx. 2 tbsp of meat/onion mixture and one strip cheese in every rolled tortilla.
- Line up enchiladas an 13x9 sheet pan.
- Preheat oven to 350
- Pour chile over enchiladas.
- Bake covered at 350 for 45 minutes.
