Fat Rice Noodles with Sweet Black Soy Sauce, Scallions, and Prawns
Makes 4-5 servings
- Two 12 oz. packages presliced fresh rice noodles
- 2 tbsp canola oil
- 1 whole head of garlic cloves, mashed
- 6 tbsp water, or as needed
- 3 tbsp sweet black soy sauce
- 6 tbsp mushroom soy sauce (Healthy Boy brand)
- 1/2 cup plus 1 tbsp brown sugar
- 1/4-1/2 tsp white pepper, or to taste
- 1 lb. prawns, shelled and deveined
- 1 medium bunch scallions, trimmed and diced
Place the rice noodles in a colander and pour hot water over them to separate and slightly soften. Separate noodles as much as possible.
Set a wok over medium heat and add oil. When oil is hot add the garlic and stir fry until well blended. Add the mushroom soy sauce, sugar, and white pepper and stir fry until the sugar is dissolved. Add the prawns and scallions and stir fry until the prawns are pink and just cooked through and the scallions are tender. Serve immediately.
